  • 2 pounds chicken thighs or breast, boneless and skinless
  • 1 cup orange marmalade
  • 1/4 cup soy sauce Consider low-sodium soy sauce to reduce saltiness.

Preparation

  • Cut the chicken into bite-sized pieces to ensure even cooking and better sauce absorption.
  • In a large mixing bowl, combine the orange marmalade and soy sauce. Stir well until fully blended.
  • Place the cut chicken pieces into the bowl with the marinade, ensuring they are well-coated. Let it marinate for at least 15 minutes for better flavor absorption.
  • Preheat your oven to 400°F (200°C).
  • Line a baking dish with parchment paper or lightly grease it to prevent sticking.

Baking

  • Transfer the marinated chicken into the dish and pour the remaining marinade over it.
  • Bake for 25 to 30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Flip the chicken halfway through cooking for even browning.
  • Once done, pull the chicken from the oven and let it rest for a few minutes before serving.
