  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar
  • 1 large egg Can be replaced with a flax egg for a vegan version.
  • 1 cup all-purpose flour Can substitute half with whole wheat flour.
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup chopped nuts or chocolate chips (optional) For added flavor and texture.

Preparation

  • Mash the ripe bananas in a large mixing bowl until smooth using a fork or potato masher.
  • Stir in the melted butter until well combined.
  • Add the vanilla extract, egg, and sugar to the banana mixture, mixing until creamy.
  • Sprinkle the baking soda and salt over the mixture, then mix until just incorporated.
  • Gradually add the flour, stirring gently until there are no dry flour spots; avoid overmixing.
  • Fold in cinnamon or nuts if desired.

Cooking

  • Preheat your air fryer to 320°F (160°C).
  • Pour the batter into a greased or parchment-lined baking pan that fits in your air fryer.
  • Place the pan in the air fryer basket and cook for about 25-30 minutes, checking for doneness with a toothpick.
  • Once cooked, remove the pan and let the bread cool for a few minutes before transferring to a wire rack.

Notes

Serve warm or allow to cool for firmer texture. Optional toppings include butter or cream cheese. Toast slices in the air fryer for enhanced flavor.
