  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Preparation

  • In a large mixing bowl, combine sliced chicken, sliced bell peppers, and onions.
  • Drizzle olive oil over the top, ensuring everything is evenly coated.
  • Sprinkle in chili powder, cumin, paprika, garlic powder, salt, and pepper, then toss the mixture until well coated.

Cooking

  • Preheat your air fryer to 400°F (200°C) and let the mixture rest for about 10 minutes.
  • Transfer the mixture into the air fryer basket in an even layer.
  • Air fry for about 10 minutes, shaking the basket halfway through for even cooking.
  • Ensure chicken reaches an internal temperature of 165°F (74°C).

Serving

  • Remove the basket from the air fryer and let it cool for a minute.
  • Warm tortillas in the microwave or on a skillet, if desired.
  • Place a generous amount of the chicken and vegetable mixture onto each tortilla, adding optional toppings as desired.
  • Roll up the fajitas and serve.

Notes

For extra flavor, marinate your ingredients for at least 10 minutes. To ensure a crunchy texture, avoid overcrowding the air fryer and cook in batches if necessary.
