  • 1 cup dried chickpeas (soaked overnight) Soak in enough water to allow expansion.
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup fresh parsley, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon baking powder
  • Salt to taste Salt, to taste
  • ¼ teaspoon black pepper
  • 2-3 tablespoons olive oil For brushing.

Preparation

  • Begin by draining and rinsing the soaked chickpeas. Ensure they are well-drained to eliminate excess moisture.
  • In a food processor, add the chickpeas, chopped onion, minced garlic, parsley, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarse but not pureed.
  • Transfer the mixture to a bowl and let it rest for about 30 minutes.
  • Preheat your air fryer to 375°F (190°C).
  • Use your hands to form the chickpea mixture into small balls or patties, about the size of a golf ball.
  • Lightly brush each falafel with olive oil, ensuring that all sides are coated.
  • Place the falafel in the air fryer basket in a single layer, leaving space between each piece for even cooking.

Cooking

  • Cook for about 15 minutes, flipping halfway through until golden brown and crispy.
  • Remove the falafel from the air fryer and let them cool slightly before serving.

Notes

For variations, consider adding roasted vegetables or spices to the mixture. Storing in the fridge keeps well for up to four days, or freeze for longer storage. Reheat in the air fryer for best results.
