Preparation

  • Wash the baby potatoes thoroughly under running water to remove any dirt.
  • Place the potatoes in a large pot, cover with water, and add a generous pinch of salt. Bring to a boil over medium-high heat and cook for 15-20 minutes, or until fork-tender.
  • Drain the potatoes and let them sit for a few minutes to cool slightly.
  • Preheat your air fryer to 400°F (200°C) while the potatoes cool.
  • Use the bottom of a glass or a flat spatula to gently smash each potato until flattened but intact.

Cooking

  • In a large bowl, toss the smashed potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
  • Arrange the potatoes in a single layer in the air fryer basket, working in batches if necessary.
  • Cook the potatoes in the air fryer for 12-15 minutes, flipping halfway through, until golden brown and crispy.
  • Remove the smashed potatoes, garnish with fresh herbs, and serve immediately.

Notes

Store leftover smashed potatoes in an airtight container in the refrigerator for up to three days or freeze for up to two months. Reheat in the air fryer before serving.
