  • 2 medium medium squash (zucchini or yellow squash) Choose your favorite type of squash.
  • 2 tablespoons olive oil Can be substituted with another high smoke point oil.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon salt Adjust according to taste.
  • ½ teaspoon ground black pepper Adjust according to taste.
  • Parmesan cheese or fresh herbs (optional) For garnishing before serving.

Preparation

  • Wash the squash thoroughly and cut off both ends.
  • Slice the squash into rounds or half-moons, about ½ inch thick.
  • In a large bowl, combine the olive oil, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.
  • Add the sliced squash to the bowl and toss gently to coat each piece evenly.
  • Preheat your air fryer to 375°F (190°C) for about 5 minutes.

Cooking

  • Place the seasoned squash in the air fryer basket in a single layer. Avoid overcrowding.
  • Cook the squash for 10-12 minutes, shaking the basket halfway through.
  • Check that the squash is golden brown and tender when done.
  • If desired, sprinkle with Parmesan cheese or fresh herbs before serving.

Notes

To achieve the best texture, cut squash into uniform pieces, and monitor them closely during the last few cooking minutes to avoid over-browning. Experiment with different seasonings for variety.
