Ingredients
  

For the filling

  • 1 cup cooked quinoa or rice
  • 1 can black beans, rinsed and drained
  • 1 cup corn (canned or frozen)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

For the peppers

  • 4 medium bell peppers (any color) Cut the tops off and remove seeds and membranes

Preparation

  • Prepare the peppers by cutting off the tops and removing seeds and membranes. Set aside.
  • In a large bowl, combine cooked quinoa or rice, black beans, corn, diced tomatoes, chili powder, cumin, garlic powder, salt, and pepper. Mix thoroughly.
  • If using cheese, stir in about half into the mixture.

Stuffing and Cooking

  • Stuff each bell pepper with the filling, pressing down gently to ensure they are well filled.
  • Place the stuffed peppers upright in the air fryer basket. Use toothpicks to secure them if needed.
  • Cook the peppers in the air fryer at 350°F (175°C) for about 12-15 minutes, or until tender and slightly charred.
  • Sprinkle remaining cheese on top during the last 2-3 minutes of cooking to allow it to melt.
  • Carefully remove from the air fryer and let cool slightly before serving.

Notes

For best results, cut peppers to a uniform height. Consider adding diced onions or sautéed mushrooms for extra moisture. Don't overpack the peppers; leave space for expansion.
