Ingredients
  

For the Zucchini

  • 2 medium zucchinis Fresh and firm
  • 2 tablespoons olive oil For coating
  • 1 teaspoon garlic powder Optional seasoning
  • 1 teaspoon onion powder Optional seasoning
  • ½ teaspoon salt To taste
  • ½ teaspoon black pepper To taste
  • ¼ teaspoon paprika Optional for added flavor
  • ¼ cup grated parmesan cheese Optional for garnish
  • to taste Fresh herbs (like parsley or basil) For garnish

Preparation

  • Wash the zucchinis thoroughly, cut off the ends, and slice them into rounds about half an inch thick.
  • In a large bowl, combine the sliced zucchini, olive oil, garlic powder, onion powder, salt, black pepper, and paprika if using. Toss until well coated.
  • Preheat the air fryer to 400°F (200°C).

Cooking

  • Place the seasoned zucchini in the air fryer basket in a single layer. Cook in batches if necessary.
  • Air fry the zucchini for about 10-12 minutes, shaking the basket halfway through for uniform crispiness.
  • If desired, sprinkle grated parmesan on the zucchini in the last 2-3 minutes of cooking to melt it.
  • Remove from the air fryer and garnish with fresh herbs before serving.

Notes

Cut zucchini uniformly for even cooking and avoid overcrowding the basket. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Adjust cooking time based on the cut thickness.
