Ingredients
  

For the Chicken

  • 2-3 pieces boneless, skinless chicken breasts Pat dry before seasoning
  • 2-3 tablespoons Cajun seasoning Adjust for spiciness
  • 1 tablespoon high-smoke point oil Avocado or grapeseed oil works best

For the Sliders

  • 12 pieces slider buns Lightly toasted optional
  • 1 cup mayonnaise Base for Alabama white sauce
  • 2 tablespoons apple cider vinegar
  • 1-2 tablespoons prepared horseradish
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 pinch cayenne pepper Optional for sauce
  • to taste sliced pickles For topping
  • to taste shredded lettuce For topping
  • to taste sliced tomatoes Optional for topping

Instructions
 

Prepare Alabama White Sauce

  • Combine mayonnaise, apple cider vinegar, prepared horseradish, lemon juice, Dijon mustard, black pepper, garlic powder, and a pinch of cayenne pepper in a medium bowl.
  • Whisk until well blended, cover and refrigerate while preparing the chicken.

Cook the Chicken

  • Pat chicken breasts dry with paper towels and rub Cajun seasoning generously all over.
  • Heat a cast-iron skillet over medium-high heat until smoking hot, add oil, and carefully place chicken inside.
  • Cook chicken for 3-5 minutes on each side until a dark crust forms and internal temperature reaches 165°F (74°C).
  • Remove chicken from skillet, let rest for a few minutes, then slice or shred for sliders.

Assemble the Sliders

  • Spread a generous amount of chilled Alabama white sauce on both halves of each slider bun.
  • Add sliced or shredded chicken on the bottom bun, followed by pickles and shredded lettuce.
  • Consider adding sliced tomatoes, cap with the top buns, and serve immediately.

Notes

Feel free to customize spiciness and avoid overcooking the chicken. The sauce can be made a day ahead for better flavor.
