  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar

  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda Ensure gluten-free if necessary.
  • 1/4 teaspoon salt

Optional Ingredients

  • 1/2 cup chocolate chips Optional, can be substituted with dried fruit.
  • 1/2 cup chopped nuts Optional, consider different nuts or omit.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine almond butter, brown sugar, and granulated sugar. Mix until smooth and creamy.
  • Add the egg and vanilla extract, mixing until fully incorporated.
  • In another bowl, whisk together baking soda and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until combined.
  • If using, fold in chocolate chips and chopped nuts gently.

Baking

  • Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
  • Flatten each cookie slightly with the back of a fork for an even baking surface.
  • Bake for 10-12 minutes or until the edges start to turn golden brown.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Chill the dough for 30 minutes before baking to prevent spreading. Keep a close eye on cookies towards the end of the baking time to avoid overbaking.
