Glaze Ingredients

  • 1/2 cup powdered sugar
  • 1-2 tbsp apple cider Adjust as needed for desired consistency

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the egg, apple cider, and vanilla extract, mixing until smooth.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, cinnamon, nutmeg, and salt.
  • Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined.
  • Fold in the diced apples gently.

Baking

  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spaced about two inches apart.
  • Bake for 10 to 12 minutes, until edges turn golden and centers remain soft.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Garnishing

  • Prepare the glaze by mixing powdered sugar and 1 to 2 tablespoons of apple cider until smooth.
  • Drizzle over cooled cookies and let set for a few minutes before serving.

Notes

For variations, consider adding nuts, dried fruits, or using different flours. Chill the dough for 30 minutes for enhanced flavor.
