Ingredients
  

For the cookie dough

  • 2 cups all-purpose flour Spoon into measuring cup and level off.
  • 1/2 cup unsalted butter, softened Should be at room temperature.
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 cup apple cider Use high-quality or homemade for best flavor.
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking tray with parchment paper.
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  • Add in the egg and vanilla extract, mixing until well combined.
  • Gradually stir in the apple cider, blending until smooth.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  • Slowly incorporate the dry ingredients into the wet mixture, mixing just until combined, being careful not to over-mix.
  • Use a cookie scoop to drop rounded tablespoons of dough onto the prepared baking tray, spacing them about 2 inches apart.

Baking

  • Bake for 12-15 minutes, or until the edges are lightly golden and the cookies look set in the center.
  • Allow the cookies to cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely.

Notes

For best results, chill the dough for at least 30 minutes before baking. Store in an airtight container to maintain freshness.
