Ingredients
  

For the crust

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon salt

For the cheesecake filling

  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

For the apple layer

  • 2 medium apples, peeled, cored, and diced
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon lemon juice

For the topping

  • 1/2 cup all-purpose flour
  • 1/3 cup rolled oats
  • 1/3 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, cold and cubed

Preparation

  • Preheat your oven to 350°F (175°C). Prepare an 8x8-inch baking pan with parchment paper.
  • In a medium bowl, mix the flour, granulated sugar, salt, and melted butter until the mixture resembles a crumbly dough.
  • Press this mixture evenly into the bottom of the prepared pan and bake for about 10 minutes.
  • While the crust is baking, prepare the cheesecake filling by beating softened cream cheese with granulated sugar until smooth, then add the egg and vanilla extract.
  • Pour the cheesecake mixture over the baked crust, spreading it evenly.
  • In a separate bowl, toss the diced apples with brown sugar, ground cinnamon, nutmeg, and lemon juice.
  • Distribute the apple mixture over the cheesecake layer.
  • For the topping, combine flour, oats, brown sugar, and cinnamon, then cut in the cold butter until coarse crumbs form. Sprinkle this topping over the apple layer.
  • Bake for 35 to 40 minutes or until the topping is golden brown and the center is set.
  • Allow to cool completely in the pan, then refrigerate for at least 2 hours before slicing.

Notes

For added flavor, serve with vanilla ice cream or drizzle with caramel sauce. Keep the butter cold for a crunchy topping.
