Ingredients
  

For the cookie dough

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened Make sure it's softened but not melted.
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 large egg (for egg wash)

For the apple filling

  • 1 large apple, peeled and diced Choose firm apples like Granny Smith or Honeycrisp.
  • 1/4 cup brown sugar
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon lemon juice Brightens flavors and prevents browning.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the flour, softened butter, granulated sugar, salt, and cinnamon, mixing until you have a smooth dough.
  • Roll the dough out on a floured surface until it's about 1/4 inch thick.
  • Cut out circles from the dough using a round cookie cutter or glass, and set them aside.

Filling Preparation

  • In another bowl, mix the diced apple with brown sugar, vanilla extract, and lemon juice until well coated.

Assembly

  • Spoon a little bit of the apple mixture onto half of the dough circles, being careful not to overfill.
  • Place another dough circle on top and seal the edges by pressing down with your fingers or using a fork.
  • Arrange the cookies on a baking sheet lined with parchment paper.
  • Brush the tops with a beaten egg to give them a golden finish.

Baking

  • Bake for 15 to 20 minutes, or until the cookies are lightly browned.
  • Let them cool on a wire rack before serving.

Notes
