Main Ingredients

  • 1 cup medium-grain rice Rinsed under cold water
  • 4 cups milk (whole or low-fat)
  • 1 cup water
  • 1 cup sugar
  • 1 stick cinnamon or 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions
 

Preparation

  • Rinse the rice under cold water to remove excess starch.
  • In a medium-sized pot, combine the rinsed rice and water, and bring to a boil over medium-high heat.
  • Once boiling, reduce the heat, cover the pot, and let it simmer for about 15 minutes until the water is absorbed and the rice is softened.

Cooking

  • Add in the milk, sugar, cinnamon stick (or ground cinnamon), vanilla extract, and salt. Stir well to combine.
  • Increase the heat to medium and bring the mixture to a gentle boil.
  • Reduce the heat to low and let it simmer uncovered for about 20-25 minutes, stirring often to prevent sticking.
  • Cook until the mixture thickens to your desired consistency.

Serving

  • Once finished, remove the pot from the heat and discard the cinnamon stick if used.
  • Allow the pudding to cool slightly before serving.
  • Serve warm or chill in the refrigerator before serving.

Notes

For a thicker pudding, increase the cooking time while stirring frequently. You can elevate the dish with various toppings or flavored milk variants.
