Cooking

  • Heat the vegetable oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic, cooking for about 3 to 5 minutes until the onion is translucent.
  • Stir in the curry powder, salt, and pepper, cooking for an additional minute.
  • Add the chicken pieces and brown on all sides for about 5 to 8 minutes.
  • Pour in the chicken stock and coconut milk, stirring to combine.
  • Incorporate the chopped hot peppers and grated ginger, then bring to a gentle simmer.
  • Reduce the heat, cover, and cook for 30 to 40 minutes, stirring occasionally until chicken is tender.

Serving

  • Serve with steamed rice, garnished with fresh herbs. Consider pairing with fried plantains or a refreshing salad.
