Instructions
 

Cooking the Sausage

  • Heat olive oil in a large pot over medium heat. Add the Italian sausage, breaking it into smaller pieces with a wooden spoon. Cook until browned and fully cooked through, about 5-7 minutes. Drain excess fat if desired.

Sautéing Vegetables

  • Add diced onion, minced garlic, sliced carrots, and cubed butternut squash to the pot. Sauté for about 5 minutes, stirring occasionally to develop flavors.

Adding Broth and Seasoning

  • Pour in chicken broth and sprinkle dried thyme over the mixture. Bring to a boil, then reduce heat to a simmer. Cook for about 15 minutes or until vegetables are tender.

Cooking Tortellini

  • Add cheese tortellini to the soup and cook according to package instructions, generally around 5-7 minutes until tender.

Finishing Touches

  • Stir in baby spinach and cook for another 1-2 minutes until wilted. Adjust seasoning with salt and pepper as needed.
  • Serve hot, topped with freshly grated Parmesan cheese.

Notes

Store leftover soup in an airtight container. It lasts about 3-4 days in the fridge or can be frozen for longer storage. Add cream for a richer soup, or substitute vegetables as desired.
