Preparation

  • Preheat your oven to 400°F (200°C).
  • Prepare your baking sheet by lining it with parchment paper. Lightly coat the paper with cooking spray or a drizzle of olive oil.
  • Steam or blanch the broccoli florets for 2-3 minutes until slightly tender, then transfer to a bowl of ice water to cool. Finely chop the broccoli.
  • In a large mixing bowl, combine the chopped broccoli, breadcrumbs, cheddar cheese, Parmesan cheese, egg, garlic powder, salt, and pepper. Mix until well blended.
  • Roll the mixture into small balls, about the size of a golf ball, and place them on the prepared baking sheet.
  • Spray or brush the tops of the balls with cooking spray or olive oil.

Baking

  • Bake in the preheated oven for 18-20 minutes, until crispy and golden.
  • Cool for a few minutes on the baking sheet before serving.

Notes
