  • 4 fillets orange roughy fillets Fresh or thawed if previously frozen.
  • 2 tablespoons olive oil For coating the fish.

  • 1 teaspoon paprika For seasoning.
  • 1 teaspoon dried oregano For seasoning.

  • 1 lemon sliced For topping the fish.
  • to taste fresh parsley, chopped For garnish.

Preparation

  • Preheat your oven to 400°F (200°C) and prepare a baking dish by lightly greasing it with non-stick spray or a few drops of olive oil.
  • Place the orange roughy fillets in the baking dish, ensuring they fit in a single layer.

Mixing the Sauce

  • In a small bowl, mix the olive oil, fresh lemon juice, minced garlic, paprika, oregano, salt, and black pepper until well combined.
  • Pour this mixture evenly over the fish fillets, ensuring they are well coated.
  • Arrange lemon slices on top of the fish for added flavor and moisture during baking.
  • Cover the baking dish with aluminum foil to keep the fish from drying out and to allow it to steam slightly.

Baking

  • Bake in the preheated oven for about 20-25 minutes, or until the fish flakes easily with a fork.
  • Remove the foil during the final 5 minutes of baking for a slightly crispy top if desired.

Serving

  • Once done, take the baking dish out of the oven and let it rest for a couple of minutes.
  • Garnish with chopped parsley before serving.
