  • 1 package (9 oz) tortellini Fresh or frozen tortellini
  • 2 cups mixed oven-roasted vegetables (e.g., bell peppers, zucchini, onions)
  • 1 cup marinara sauce Store-bought or homemade
  • 1 cup shredded mozzarella cheese Divided for topping
  • 1/2 cup grated Parmesan cheese

Additional Ingredients

  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • to taste Fresh basil for garnish Optional

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large pot, bring water to a boil and cook the tortellini according to package instructions. Drain when al dente.
  • In a mixing bowl, combine tortellini, roasted vegetables, marinara sauce, and half of the mozzarella. Stir gently.
  • Grease a baking dish and pour the mixture, spreading it evenly.
  • Top with remaining mozzarella and grated Parmesan cheese.
  • Drizzle olive oil and season with salt and pepper.

Baking

  • Bake for 25 to 30 minutes until bubbly and golden.

Serving

  • Garnish with fresh basil if desired and serve hot.

Notes

Allow casserole to rest for 5 to 10 minutes before serving to set. Keeps in the fridge for up to 3 days or freeze for up to 3 months.
