  • 1 lb chicken breast, cubed Use boneless, skinless chicken breast for best results.
  • 8 oz cream cheese, softened Let it sit at room temperature for easier mixing.
  • 2 cups fresh spinach, chopped Feel free to use frozen spinach, just make sure to drain it well.
  • 1 cup sun-dried tomatoes, chopped Opt for oil-packed tomatoes for extra flavor.
  • 1 cup parmesan cheese, shredded Freshly shredded cheese is preferred.
  • 1 cup mozzarella cheese, shredded Use low-moisture mozzarella for better melting.
  • 1 teaspoon garlic powder Enhances the overall flavor.
  • to taste salt and pepper Adjust according to your preference.
  • 1 tablespoon olive oil For cooking the chicken.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat.
  • Add the cubed chicken breast, and cook until browned and cooked through, about 5-7 minutes. Stir occasionally.
  • In a mixing bowl, combine softened cream cheese, chopped spinach, sun-dried tomatoes, garlic powder, and seasoning with salt and pepper.
  • Fold in half of the shredded parmesan and mozzarella cheese.
  • Add the cooked chicken to the mixture, mixing until well-blended.
  • Transfer the mixture to a baking dish and spread evenly.
  • Top with the remaining parmesan and mozzarella cheese.

Baking

  • Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden brown.
  • Allow to cool for a few minutes before serving.

Notes

Consider sprinkling fresh herbs on top before serving. This casserole can be made ahead of time and stored in the refrigerator for up to a day before baking.
