Ingredients
  

Wet Ingredients

  • 8 tablespoons butter, softened to room temperature Use unsalted butter for best results.
  • 1/8 cup granulated sugar
  • 1/4 cup brown sugar Packed lightly for best flavor.
  • 1 egg, room temperature
  • 1/2 cup mashed bananas (about 1 large banana) The riper, the better for sweetness.
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Add-ins

  • 3/4 cup semi-sweet chocolate chips Feel free to substitute with dark chocolate or milk chocolate.

Preparation

  • Preheat your oven to 350 degrees Fahrenheit.
  • Cream the butter, granulated sugar, and brown sugar together in a large mixing bowl until light and fluffy.
  • Add the egg, vanilla extract, and mashed banana to the creamed mixture and mix until well combined.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet mixture until just combined.
  • Fold in the semi-sweet chocolate chips until evenly distributed.
  • Line a baking sheet with parchment paper. Drop tablespoon-sized dollops of dough onto the sheet, spacing them about two inches apart.
  • Bake in the preheated oven for 10 to 12 minutes, until the edges are golden.
  • Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, use very ripe bananas. You can experiment with add-ins like nuts or oats for a twist on the classic recipe.
