  • 2 pieces ripe bananas Overripe bananas work best for sweetness.
  • 1/2 cup sugar
  • 1/4 cup melted butter
  • 1 piece egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour Measure by spooning into the cup.
  • 1/2 teaspoon cinnamon Enhances flavor.

Streusel Topping

  • 1/4 cup brown sugar Mix with a pinch of cinnamon.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a mixing bowl, mash the ripe bananas with a fork until smooth.
  • Add in the sugar, melted butter, egg, and vanilla extract. Mix until well combined.
  • In a separate bowl, mix the baking soda, salt, flour, and cinnamon.
  • Gradually add the dry ingredients to the banana mixture, stirring until just combined.

Baking

  • Divide the batter among the muffin cups, filling each about two-thirds full.
  • For the streusel topping, mix brown sugar and a pinch of cinnamon and sprinkle over the batter.
  • Bake for 18-20 minutes or until a toothpick comes out clean.
  • Let the muffins cool in the tin for a few minutes, then transfer to a wire rack to cool completely.

Notes

Serve warm for the best flavor and texture. Can be customized by adding nuts or chocolate chips.
