Main Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 cups cooked rice (white or brown)
  • 1 cup broccoli florets
  • 1 medium red bell pepper, sliced
  • 1 medium carrot, julienned
  • 3 stalks green onions, chopped
  • ½ cup mayonnaise

Sauce Ingredients

  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha sauce (adjust for spice level)
  • 1 tablespoon soy sauce
  • 2 tablespoons oil (for cooking)
  • to taste Salt and pepper
  • Sesame seeds (for garnishing)

Instructions
 

Preparation

  • Cut the chicken breasts into bite-sized pieces and season them with salt and pepper.
  • In a large skillet, heat 2 tablespoons of oil over medium heat.

Cooking

  • Add the chicken pieces to the skillet and cook until golden brown and fully cooked, about 5-7 minutes.
  • Remove the chicken from the skillet and set aside.
  • Without cleaning the skillet, add the broccoli, red bell pepper, and carrot. Sauté for about 3-5 minutes until tender yet crisp.

Sauce Preparation

  • While the vegetables are cooking, mix mayonnaise, sweet chili sauce, Sriracha sauce, and soy sauce in a small bowl until well blended.

Combine Ingredients

  • Return the cooked chicken to the skillet. Pour the prepared sauce over the chicken and vegetables and stir well to coat.

Serving

  • Divide the cooked rice into serving bowls.
  • Spoon the chicken and vegetable mixture over the rice.
  • Garnish with chopped green onions and sesame seeds, serve immediately.

Notes

For meal prep, store chicken, veggies, and rice separately. Adjust spice level based on your taste. You can customize with other proteins or vegetables as preferred.
