Preparation

  • Season chicken pieces with salt and pepper. Sprinkle cornstarch for browning if desired.
  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.

Cooking the Chicken

  • Add the chicken pieces to the hot skillet and cook until golden brown and cooked through, about 5-7 minutes.
  • Stir frequently to ensure even cooking.

Making the Sauce

  • If needed, add 1 tablespoon of olive oil or butter to the skillet.
  • Add minced garlic and ginger and sauté for 1-2 minutes.
  • Stir in curry powder and turmeric; cook for another minute.
  • Pour in coconut milk, soy sauce, brown sugar, and lime juice. Stir to combine.
  • Allow the sauce to simmer gently for 5-10 minutes.

Finishing the Dish

  • Once the sauce thickens slightly, add sliced bell peppers and snow peas. Cook for another 3-4 minutes.
  • Stir in chopped basil leaves before serving.

Notes

Serve over rice or noodles and garnish with basil and cilantro. The dish can be stored in the refrigerator for 3-4 days or frozen for up to 2 months. Reheat gently on low heat, adding liquid if necessary to restore creaminess.
