  • 3 cups cooked chicken, shredded (rotisserie works great) Use rotisserie chicken for convenience.
  • 1 cup BBQ sauce Reserve some for drizzling on top.
  • 0.5 teaspoon salt
  • 1 bag corn tortilla chips Select your favorite brand.
  • 1 cup nacho cheese sauce Drizzled over for added flavor.
  • 1.5 cups sharp cheddar cheese, shredded For the best melting experience.
  • 3 tablespoons parsley, chopped For garnish.
  • 0.5 cup sour cream For serving.
  • 1 medium red onion, chopped For added flavor and crunch.

Preparation

  • Preheat the oven to 400°F (200°C) and line a 9x13-inch baking sheet with parchment paper.
  • Spread tortilla chips evenly across the prepared baking sheet.
  • In a bowl, toss the shredded chicken with ¾ cup of BBQ sauce and a pinch of salt.

Assembly and Baking

  • Layer the BBQ chicken evenly over the tortilla chips.
  • Drizzle nacho cheese sauce over the chicken, then sprinkle with shredded cheddar cheese.
  • Bake in the preheated oven for 8-10 minutes, until cheese is melted and bubbling.
  • Drizzle with remaining BBQ sauce, add sour cream, chopped parsley, and diced red onion before serving.

Notes

Serve warm and encourage guests to customize their nachos with toppings. Store leftovers in an airtight container for up to 2 days.
