  • 2 tablespoons olive oil For sautéing.

  • 2 carrots, sliced Adds sweetness.
  • 2 potatoes, diced Thickens the stew.

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic to the pot and sauté until translucent, about 3 to 5 minutes.
  • Season the chunks of beef with salt and pepper. Add to the pot and brown on all sides.
  • Add the sliced carrots, diced potatoes, and chopped bell pepper; cook for about 5 minutes until slightly softened.
  • Stir in the diced tomatoes, beef broth, paprika, and cumin.
  • Bring to a gentle simmer, cover, and reduce the heat to low.
  • Let it cook for about 1.5 to 2 hours until the beef is tender.

Serving

  • Ladle the goulash into bowls and serve hot over cooked rice or with bread.
  • Optionally, sprinkle fresh parsley on top for garnish.

Notes

Goulash can taste even better the next day. Store leftovers in airtight containers. Freeze for up to three months.
