  • 2 cups mixed vegetables (bell peppers, broccoli, carrots) Fresh or frozen can be used
  • 4 cloves garlic, minced Adjust to taste
  • 2 tablespoons soy sauce Use low-sodium for a healthier option
  • 1 tablespoon olive oil For sautéing
  • 1 teaspoon ginger, grated Freshly grated for best flavor

  • Cooked rice or noodles For serving

Preparation

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the sliced chicken breast and cook until golden brown, about 5 to 7 minutes.
  • Once the chicken is cooked, add the minced garlic and grated ginger, and sauté for 1 minute.
  • Stir in the mixed vegetables and pour in the soy sauce. Cook together for an additional 4 to 5 minutes until vegetables are tender-crisp.
  • Season with salt and pepper to taste, stirring well.
  • Serve over cooked rice or noodles.

Notes

For a creative presentation, garnish with sesame seeds or sliced green onions. This dish can be served family-style for a communal dining experience.
