  • 1 package cheese tortellini Cook according to package instructions
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup pepperoni, sliced
  • 1/2 cup diced bell peppers
  • 1/4 cup red onion, diced
  • 1 cup Italian dressing Store-bought or homemade
  • 1/2 cup grated Parmesan cheese
  • to taste none Salt and pepper

Preparation

  • Cook the cheese tortellini according to the package instructions until al dente.
  • Drain the tortellini and set aside to cool.
  • In a large mixing bowl, combine the cooled tortellini with cherry tomatoes, cucumber, black olives, pepperoni, diced bell peppers, and red onion.
  • Drizzle the Italian dressing over the mixture and toss gently until well mixed.
  • Sprinkle grated Parmesan cheese over the top and add salt and pepper to taste.
  • Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes.

Serving

  • Transfer the salad to a serving bowl and garnish with additional Parmesan cheese or fresh parsley if desired.
  • Serve chilled, optionally alongside grilled chicken, garlic bread, or a crisp green salad.

Notes

For added flavor, consider roasting the vegetables or using homemade Italian dressing. Store leftovers in an airtight container for up to three days.
