  • 1 lb boneless, skinless chicken breast (sliced or cubed)

  • 1 tbsp olive oil for searing the chicken
  • 3 tbsp unsalted butter for making the sauce
  • 4 cloves garlic, minced enhances flavor of the sauce
  • 2 tbsp all-purpose flour to thicken the sauce
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream for creaminess
  • ½ cup freshly grated parmesan cheese
  • ½ cup sun-dried tomatoes (oil-packed, drained and chopped) adds sweetness and tang
  • 1 tsp smoked paprika
  • 1 tsp dried Italian seasoning
  • ½ lb (8 oz) penne pasta or any pasta of choice

Instructions
 

Preparation

  • Season the chicken pieces with salt and pepper. In a large skillet, heat the olive oil over medium-high heat.
  • Sear the chicken for about 5–7 minutes on each side, or until browned and cooked through. Remove chicken from the skillet and set aside.
  • In the same skillet, reduce heat to medium and melt the butter. Add minced garlic and sauté for about 30 seconds until fragrant.
  • Sprinkle in the flour, whisking constantly for 1–2 minutes to form a roux.

Making the Sauce

  • Slowly pour in the chicken broth while whisking to prevent lumps. Add the heavy cream and continue whisking until the mixture thickens.
  • Stir in the grated parmesan cheese until melted into a creamy sauce.
  • Mix in the sun-dried tomatoes, smoked paprika, and dried Italian seasoning. Let the sauce simmer for a few minutes.

Combining and Serving

  • Return the seared chicken back into the skillet to simmer gently in the sauce.
  • Cook the penne pasta in a pot of boiling water until al dente, then drain and toss into the skillet, mixing well.
  • Garnish with fresh basil and serve immediately.
