  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • 1 cup granulated sugar
  • 1 cup packed brown sugar Use dark brown sugar for a richer flavor.
  • 2 large eggs Room temperature eggs work best.
  • 2 teaspoons vanilla extract
  • 2 ¾ cups all-purpose flour Spoon and level for accuracy.
  • 1 teaspoon baking soda
  • ½ teaspoon salt Adjust according to taste.
  • 1 cup Biscoff spread Can use crunchy for added texture.
  • 1 cup chocolate chips
  • ½ cup crushed Biscoff cookies For garnish.

Preparation

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs, one at a time, followed by the vanilla extract and Biscoff spread, mixing until everything is well combined.
  • In another bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Gently fold in the chocolate chips.

Baking

  • Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Sprinkle crushed Biscoff cookies on top of each cookie before baking.
  • Bake for 10-12 minutes, or until the edges are golden brown and the centers appear set.
  • Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

For added flavor, consider chilling the dough for at least 30 minutes before baking. Serve warm with milk or coffee for the best taste experience.
