Ingredients
  

Cookie Dough

  • 2 1/4 cups Bisquick mix
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, softened at room temperature
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
  • In a large mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Beat together until the mixture is smooth and creamy.
  • Add in the egg and vanilla extract. Mix well until the ingredients are fully incorporated.
  • Gradually add the Bisquick mix, baking soda, and salt. Stir until just combined; do not over-mix.
  • Fold in the chocolate chips evenly throughout the dough.
  • Drop rounded tablespoons of the dough onto the prepared baking sheet, leaving space between each cookie to allow for spreading.

Baking

  • Bake in the preheated oven for 10-12 minutes or until the edges turn lightly golden.
  • Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

Cookies can be enjoyed warm with milk or transformed into ice cream sandwiches. Store in an airtight container at room temperature for up to a week.
