Brownie Base

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt

Cheesecake Layer

  • 8 oz cream cheese, softened room temperature
  • 1/2 cup powdered sugar
  • 1/2 cup blackberry puree
  • 1/4 cup fresh blackberries

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  • In a medium saucepan, melt the unsalted butter over medium heat. Remove from heat and stir in the granulated sugar.
  • Beat in the eggs one at a time, followed by the vanilla extract.
  • Incorporate the all-purpose flour, cocoa powder, and salt, stirring until well combined.
  • Pour half of the brownie mixture into the prepared baking pan.
  • In a separate bowl, mix the softened cream cheese and powdered sugar until smooth and creamy.
  • Spread the cream cheese mixture over the brownie layer evenly.
  • Swirl in the blackberry puree over the cream cheese layer.
  • Pour the remaining brownie batter over the cream cheese and blackberry layers, and top with fresh blackberries.

Baking

  • Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted comes out with a few moist crumbs.
  • Allow the brownies to cool completely before slicing into squares.

Notes

For best results, use room temperature ingredients for mixing, and do not overmix the brownie batter to keep them soft and fudgy. Chill for enhanced flavor before serving.
