Ingredients
  

For the cake

  • 2 cups all-purpose flour (240 grams)
  • 1.5 cups granulated sugar (300 grams)
  • 0.75 cups unsweetened cocoa powder (75 grams)
  • 1.5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 3 large eggs
  • 0.75 cups vegetable oil (180 ml)
  • 1 cups buttermilk (240 ml)
  • 2 teaspoons vanilla extract
  • 0.5 cups hot water (120 ml)

For the blackberry filling

  • 1.5 cups fresh or frozen blackberries (225 grams)
  • 0.25 cups granulated sugar (50 grams)
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon lemon juice

For the whipped cream

  • 1.5 cups heavy whipping cream (360 ml)
  • 0.25 cups powdered sugar (30 grams)
  • 1 teaspoon vanilla extract

For decoration

  • to taste Fresh blackberries
  • to taste Edible flowers
  • to taste Dark chocolate shavings
  • to taste Cocoa powder for dusting

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and line two 8-inch or 9-inch cake pans with parchment.
  • In a large mixing bowl, combine all-purpose flour, granulated sugar, unsweetened cocoa powder, baking powder, baking soda, and salt.
  • In another bowl, whisk together eggs, vegetable oil, buttermilk, and vanilla extract until smooth.
  • Pour the wet mixture into the dry ingredients and stir just until combined. Be careful not to overmix.
  • Add the hot water to the batter and mix well.

Baking

  • Divide the batter evenly between the prepared cake pans and bake for 30–35 minutes, until a toothpick comes out clean.
  • Let the cakes cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.

Blackberry Filling

  • In a saucepan over medium heat, combine blackberries and 1/4 cup of granulated sugar. Stir until the blackberries become juicy.
  • Mix cornstarch with water to form a slurry, then add to the saucepan with lemon juice. Cook until thickened, then let it cool.

Assembling the Cake

  • Once cooled, place one cake layer on a serving plate. Spread blackberry filling on top.
  • Add a layer of whipped cream followed by the second cake layer. Top with more whipped cream.
  • Decorate with fresh blackberries, dark chocolate shavings, and edible flowers.

Chill

  • Refrigerate the assembled cake for at least one hour before slicing.

Notes

Be precise with measurements and use room temperature ingredients for best results. You can prepare the cakes and filling a day in advance.
