  • 2 pieces chicken breasts, sliced
  • 1 piece bell pepper, sliced
  • 1 piece onion, sliced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • 4 pieces flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • as needed Olive oil for cooking

Preparation

  • Preheat your Blackstone griddle to ensure even cooking and a crispy texture.
  • Drizzle olive oil over the griddle to prevent sticking.

Cooking

  • Once the griddle is hot, add the sliced chicken, bell pepper, and onion.
  • Season with chili powder, cumin, salt, and pepper, cooking for about 8-10 minutes until chicken is golden and veggies are tender.
  • Remove the chicken and veggies from the griddle and set aside.

Assembly

  • Place one tortilla on the griddle, sprinkle half of the cheese on one half.
  • Add a generous portion of the cooked chicken and veggie mix on top of the cheese, then fold the tortilla over.
  • Cook the quesadilla until it is golden brown and the cheese is melted, about 3-4 minutes per side.
  • Repeat the process for remaining ingredients, then cut the quesadillas into wedges and serve warm.

Notes

For storage, let quesadillas cool, then store in an airtight container in the refrigerator for up to three days or freeze wrapped individually for up to two months.
