  • 1 cup Vanilla Custard Use store-bought or homemade for convenience.
  • 1 cup Semi-Sweet Chocolate Chips Feel free to swap in dark chocolate for added richness.
  • 2 tablespoons Vegetable Oil Coconut oil can be a great alternative.

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.
  • In a mixing bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Stir until well blended.
  • In another large bowl, cream together the unsalted butter and granulated sugar until light and fluffy (about 2-3 minutes).
  • Beat in the egg and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.
  • Scoop small portions of dough (about a tablespoon each) and roll into balls. Place them onto the prepared baking sheet.

Baking

  • Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Filling and Topping

  • Prepare your vanilla custard if making it from scratch. Otherwise, set aside store-bought custard.
  • Once the cookies are cool, create a small well in the center of each cookie and fill with a spoonful of custard.
  • Melt chocolate chips and vegetable oil together in a microwave-safe bowl using 30-second intervals until smooth.
  • Drizzle or dip each cookie into the melted chocolate, ensuring the custard is well covered.
  • Let the chocolate-coated cookie bites set in the refrigerator for about 30 minutes to an hour.

Notes
