Ingredients
  

Base

  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups half and half
  • 2 cups chicken stock
  • 1 cube chicken bouillon

Vegetables

  • 1/2 cup finely grated carrots
  • 1 cup chopped broccoli can use frozen

Cheese

  • 1 cup grated cheddar cheese

Instructions
 

Preparation

  • Melt the butter in a large Dutch oven or stock pot on medium heat.
  • Add the flour and stir continuously for about 2-3 minutes until the mixture turns a golden hue to create a roux.

Cooking

  • Pour in the chicken stock and stir well to combine.
  • Incorporate the half and half, continue stirring as the mixture comes to a boil.
  • Reduce heat to medium-low and let it simmer for 10-15 minutes, stirring occasionally until thickened.
  • Add the chicken bouillon cube and chopped broccoli, stirring to combine.
  • Add the grated carrots, bring to a boil and cook for an additional 5-7 minutes until broccoli is tender.
  • Stir in the grated cheddar cheese until melted.
  • Season with salt and pepper to taste.

Notes

Serve hot in warm bowls with crusty bread or alongside a salad. Variations include broccoli cauliflower soup or spicy broccoli cheese soup.
