  • 1 cup shredded cheddar cheese Opt for high-quality cheddar for richer taste.
  • 1 cup vegetable or chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons butter For sautéing.

Preparation

  • Melt the butter in a pot over medium heat.
  • Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  • Add the broccoli florets and broth. Stir and bring to a boil.
  • Once boiling, reduce heat and let it simmer for about 10 minutes or until the broccoli is tender.
  • Stir in the heavy cream and shredded cheddar cheese until melted and creamy.
  • Season with salt and pepper to taste.
  • Ladle into bowls and serve hot.

Notes

Can be served with crusty bread or garnished with extra cheese or broccoli florets. For a thicker soup, blend part of it for a creamier texture.
