  • 2 tablespoons Guinness syrup (optional)

Chocolate Chip Cookie Dough Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon honey
  • 3/4 cup chopped chocolate (milk or dark) your preference

  • 3/4 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup dark brown sugar
  • 1 large egg
  • 1 1/2 teaspoons honey
  • 1 teaspoon vanilla extract

Instructions
 

Cheesecake Layer Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine cream cheese, granulated sugar, egg, and optional Guinness syrup. Beat until smooth.
  • Pour the mixture into an 8x8-inch baking dish and bake for 35-40 minutes until the center is set but still slightly jiggles.
  • Let the cheesecake cool on a wire rack and refrigerate for at least four hours, preferably overnight.

Chocolate Chip Cookie Dough Preparation

  • In a separate bowl, sift together all-purpose flour, baking soda, and salt; set aside.
  • In a stand mixer, combine softened butter and both sugars until creamy.
  • Add the egg, vanilla, and honey, mix until just incorporated.
  • Gradually add the flour mixture and mix on low until combined. Fold in chopped chocolate.
  • Cover the dough with plastic wrap and chill in the refrigerator.

Chocolate Cookie Dough Preparation

  • Sift together all-purpose flour, cocoa powder, baking soda, baking powder, and salt in a large bowl.
  • Cream softened butter and dark brown sugar together in your stand mixer.
  • Add the egg, honey, and vanilla, mixing until well combined.
  • Gradually add the flour mixture, mixing on low until uniform. Store the dough for later use.

Baking Brookie Cookies

  • Preheat your oven to 350°F (175°C) again and line a baking sheet with parchment paper.
  • Portion out one tablespoon each of the cheesecake, chocolate chip cookie dough, and chocolate cookie dough. Roll them together into a ball.
  • Seal the dough balls two inches apart on the prepared baking sheet and bake for 10-12 minutes.
  • Allow cookies to rest on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely.

Notes

For a special touch, serve Brookie Cookies warm with vanilla ice cream or dust them with powdered sugar for an elegant finish. To store, keep in an airtight container for up to three days or freeze for up to two weeks.
