  • In a large bowl, cream together softened butter and brown sugar until smooth.
  • Add flour and salt, mixing until just combined to maintain a crumbly texture.
  • Divide the mixture in half and press one half into the bottom of the prepared pan to form the crust.
  • In another bowl, mix diced apples with cinnamon and spread evenly over the shortbread crust.

Assembly

  • Combine the remaining half of the dough with rolled oats and chopped nuts, if using.
  • Crumble this mixture over the apple layer evenly.

Baking

  • Place the pan in the preheated oven and bake for 30-35 minutes or until the top is golden brown.
  • Allow the bars to cool in the pan briefly before transferring to a wire rack to cool completely.
