Ingredients
  

For the Cookie Dough

  • 1 cup brown sugar, packed For a rich flavor.
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

For the Filling

  • 1 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon cinnamon

For the Frosting

  • 2 cups powdered sugar
  • 3 tablespoons milk Adjust for desired thickness.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet mixture until well combined.

Filling Preparation

  • In a separate bowl, mix the filling ingredients: brown sugar, flour, and cinnamon. Set aside.

Cookie Assembly

  • Divide the cookie dough into two equal portions. Roll out one portion on a floured surface to about 1/4 inch thick. Cut into squares or rectangles.
  • Place half of the cut dough pieces on a baking sheet, leaving space in between each. Add about a teaspoon of the filling mixture in the center of each.
  • Roll out the second portion of dough and cut into similar shapes. Place these over the filled pieces, pressing down the edges to seal.
  • Use a fork to crimp the edges for a decorative touch and to ensure they are well sealed.

Baking

  • Bake in the preheated oven for 12-15 minutes or until lightly golden.
  • Allow cooling on a wire rack before preparing the frosting.

Frosting

  • For the frosting, mix powdered sugar with milk until smooth. Adjust thickness as needed.
  • Spread frosting over the cooled cookies and add colorful sprinkles if desired.

Notes

Ensure butter is at room temperature. Measure flour accurately. Do not overbake to maintain the chewy texture.
