Ingredients
  

For the Brownie Base

  • 1 box (9 oz) fudge brownie mix
  • 1 large egg
  • 1 tbsp cold water

For the Caramel Layer

  • 14 oz unwrapped soft caramels
  • 1 can (5 oz) evaporated milk

For the Cheesecake Mixture

  • 16 oz cream cheese, room temperature Ensure it's at room temperature for smooth mixing.
  • ½ cup granulated sugar
  • 1 tsp pure vanilla extract Can use other flavored extracts as variations.
  • 2 large eggs

For Serving

  • 1 cup chocolate fudge sauce Drizzle over cheesecake when serving.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the fudge brownie mix, one large egg, and cold water. Stir until smooth.
  • Generously grease a 9-inch springform pan.
  • Press the brownie mixture evenly into the bottom of the pan.

Baking the Brownie Layer

  • Bake the brownie base for approximately 25 minutes. Keep an eye on it; it should be set but still moist.
  • Remove from the oven and allow to cool for about 15 minutes.

Making the Caramel Layer

  • In a saucepan, add the unwrapped soft caramels and evaporated milk.
  • Heat over low heat, stirring constantly until melted and smooth.
  • Pour the caramel over the cooled brownie layer and set aside.

Creating the Cheesecake Mixture

  • In a large mixing bowl, beat the cream cheese until fluffy.
  • Add sugar, vanilla extract, and eggs. Mix until creamy and blended.

Assembling the Cheesecake

  • Carefully spread the cream cheese mixture over the caramel layer.

Baking the Cheesecake

  • Bake for around 40 minutes, until the center jiggles slightly.
  • Allow it to cool completely at room temperature.

Chilling and Serving

  • Refrigerate for at least four hours before serving.
  • Run a knife around the edges of the springform pan before releasing.
  • Serve with chocolate fudge sauce drizzled on top.

Notes

For better texture, allow the cheesecake to cool gradually after baking. Avoid opening the oven during baking to prevent cracks.
