Preparation and Cooking

  • Season the chicken breasts generously with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat.
  • Once the oil is hot, sear the chicken breasts for 6 to 7 minutes on each side until cooked through (internal temperature of 165°F).
  • While the chicken is cooking, combine chopped tomatoes, basil, minced garlic, salt, pepper, and a drizzle of olive oil in a bowl.
  • Remove the chicken from the skillet and top it with the tomato mixture.
  • Drizzle with balsamic glaze if desired, and serve hot.

Notes

If storing leftovers, allow the chicken to cool before placing it in an airtight container. Refrigerate for up to 3 days, or freeze for up to 2 months. Consider variations like cheesy, grilled, or spicy bruschetta chicken for added excitement.
