Ingredients
  

For the Chicken

  • 2 pieces boneless, skinless chicken breasts Choose high-quality chicken for the best flavor.
  • 1/2 cup hot buffalo sauce Can marinate chicken in this for more flavor.
  • 2 tablespoons olive oil Used for seasoning the chicken.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • to taste Salt and pepper

For the Bowls

  • 2 cups cooked brown rice Can substitute with quinoa for a healthier option.
  • 1 cup corn kernels Fresh or canned.
  • 1 cup black beans Rinsed and drained.
  • 1 cup cherry tomatoes Halved.
  • 1/2 cup diced red onion
  • 1 piece avocado Sliced.
  • 1/4 cup crumbled blue cheese For topping.
  • 1/4 cup ranch dressing For drizzling.
  • to taste Fresh cilantro For garnish.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Coat the chicken breasts with the seasoning mixture.
  • Place the chicken in a baking dish and roast for about 20-25 minutes, until the internal temperature reaches 165°F (75°C).
  • Allow the chicken to rest for a few minutes before slicing into thin strips.

Assembly

  • In a large bowl, combine cooked brown rice, corn, black beans, cherry tomatoes, and diced red onion.
  • Take a portion of this mixture and divide it into serving bowls.
  • Top each bowl with sliced chicken and avocado slices.
  • Drizzle with buffalo sauce and ranch dressing, then sprinkle with blue cheese.
  • Garnish with fresh cilantro and serve immediately.

Notes

For meal prep, store ingredients separately to maintain freshness, especially avocado and dressing. Enjoy these bowls within 3-4 days.
