  • 2 pounds boneless, skinless chicken breasts
  • 1 cup buffalo sauce
  • 1 cup cooked quinoa or rice
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup crumbled blue cheese (or feta)
  • 1/4 cup sliced green onions
  • 1/4 cup ranch dressing (optional)
  • Salt and pepper, to taste

Preparation

  • Preheat your oven to 375°F (190°C).
  • Place the chicken breasts in a baking dish and season them with salt and pepper.
  • Pour the buffalo sauce over the chicken, ensuring it’s well coated.
  • Bake in the oven for about 25-30 minutes until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C).
  • Remove the chicken from the oven and let it rest for a few minutes.
  • Shred the chicken using two forks.

Assembly

  • In separate serving bowls, layer cooked quinoa or rice at the bottom.
  • Add the shredded buffalo chicken on top of the grains.
  • Load up on toppings: sprinkle lettuce, tomatoes, cheeses, and green onions.
  • If desired, drizzle ranch dressing over the top for added creaminess.

Notes

Consider marinating the chicken in buffalo sauce for a few hours before cooking for deeper flavors. You can also use a slow cooker or grill the chicken for additional flavor. For a lighter option, swap ranch dressing with Greek yogurt mixed with herbs.
