  • 1 lb boneless, skinless chicken breasts Use high-quality chicken for best flavor
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1/2 cup buffalo wing sauce Adjust to taste for desired spice level
  • 1 tsp cumin
  • 1 tsp chili powder
  • to taste Salt and pepper
  • 1/2 cup cream cheese Ensure it's at room temperature for easy blending
  • to taste Chopped green onions for garnish

Preparation

  • Gather all your ingredients and prep your workstation.

Cooking

  • In a large pot, heat a bit of oil over medium heat. Add the diced onion and minced garlic, and sauté until translucent (about 3-4 minutes).
  • Add the chicken breasts and cook for 5-7 minutes, turning occasionally until browned.
  • Stir in white beans, diced tomatoes, chicken broth, buffalo wing sauce, cumin, chili powder, salt, and pepper, mixing well.
  • Bring to a boil, then reduce heat and cover, simmering for about 20 minutes.
  • Remove chicken, shred it with forks, and return to the pot.
  • Stir in cream cheese until melted and combined.
  • Taste and adjust seasoning as needed before serving.

Notes

For a chili bar, offer toppings such as shredded cheese, sour cream, or tortilla chips. Store leftovers in an airtight container for up to 4 days in the fridge or freeze for up to 3 months.
