  • 2 cups shredded cooked chicken Can use store-bought rotisserie chicken.
  • 1/2 cup buffalo sauce Adjust spice level to preference.
  • 8 small tortillas Warming enhances flavor.
  • 1 cup shredded cheese Use cheddar or mozzarella.
  • 1 cup shredded lettuce Adds crunch to the tacos.
  • 1/2 cup ranch or blue cheese dressing For drizzling over tacos.
  • Oil for cooking Use as needed for frying.

Instructions
 

Preparation

  • Mix the shredded chicken with buffalo sauce in a bowl until evenly coated.
  • Heat a little oil in a skillet over medium heat.
  • Warm the tortillas in the skillet briefly for pliability.

Cooking

  • Place a tortilla in the skillet and add a portion of the buffalo chicken mixture in the center.
  • Sprinkle shredded cheese on top of the chicken.
  • Cook for 2-3 minutes until the bottom is golden and the cheese melts.
  • Carefully fold the tortilla in half and cook for another minute on both sides.
  • Remove from skillet and let sit briefly.

Serving

  • Top the taco with fresh lettuce and drizzle with ranch or blue cheese dressing.
  • Serve immediately with extra toppings on the side.

Notes

Customize with extra toppings or condiments for guests. Store leftovers in an airtight container for up to three days.
