  • 1/2 cup Buffalo Sauce Adjust amount to taste.

  • 1 cup Shredded Cheddar Cheese Can use other cheese types for variation.

Tortilla Ingredients

  • 6-8 pieces corn Tortillas Warming is critical to prevent cracking.

Additional Ingredients

  • 1/4 cup Plain Greek Yogurt For the dipping sauce.
  • 2 tbsp Green Onion Chopped, for garnish.
  • 1/4 cup Red Onion Chopped.
  • 1/2 tsp Garlic Powder Enhances flavor.
  • 1/2 tsp Sea Salt To taste.

Instructions
 

Preparation

  • In a mixing bowl, combine the shredded chicken, buffalo sauce, melted butter, and shredded cheddar cheese. Stir until coated.

Tortilla Preparation

  • Heat a dry skillet over medium heat and warm each tortilla for 15 to 20 seconds on each side.

Assembly

  • Spoon about 2 tablespoons of the filling onto each tortilla and roll tightly, placing seam-side down on a baking sheet.

Cooking

  • In a separate skillet, heat oil over medium heat. Fry the taquitos seam-side down for 1 to 2 minutes on each side until golden-brown and crispy.

Dipping Sauce

  • In a small bowl, mix together the Greek yogurt and ranch or blue cheese dressing with a sprinkle of chives.

Serving

  • Arrange cooked taquitos on a platter, drizzle with buffalo sauce, and serve with the dipping sauce on the side.

Notes

Store leftovers in an airtight container. They can be refrigerated for 3-4 days or frozen for later use.
