Ingredients
  

For the cookies

  • 1 cup Unsalted butter, softened Make sure it's at room temperature
  • 1 cup Granulated sugar
  • 1 cup Light brown sugar, packed
  • 2 large Eggs At room temperature
  • 1 teaspoon Vanilla extract
  • 2 1/4 cups All-purpose flour Measure using the spoon and level method
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 2 cups Chopped pecans Fold into the dough

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2 to 3 minutes.
  • Beat in the eggs one at a time, then add the vanilla extract and mix until well blended.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry mixture to the wet ingredients, mixing just until combined. Be careful not to overmix.
  • Fold in the chopped pecans until evenly distributed.
  • Chill the dough in the refrigerator for at least one hour.

Baking

  • Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches of space between each scoop.
  • Bake the cookies for 10 to 12 minutes or until the edges turn golden and the centers appear soft.
  • Let them cool on the baking sheet for about 2 minutes before transferring to a wire rack to cool completely.

Notes

For best results, chill the dough. Store cookies in an airtight container for up to a week, or freeze for longer storage.
