  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups butterscotch chips High-quality recommended
  • 1 cup semi-sweet chocolate chips High-quality recommended

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Fold in the butterscotch chips and semi-sweet chocolate chips.

Baking

  • Drop rounded tablespoons of dough onto ungreased baking sheets, leaving enough space between each cookie.
  • Bake for 10-12 minutes or until the edges are golden brown. The centers may look soft but will firm up while cooling.
  • Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.

Notes

Serve warm with vanilla ice cream for a delightful experience. Can also be packed as gifts or party favors. Drizzling with melted chocolate or butterscotch sauce enhances presentation.
